gazpacho for 25


 this is a gazpacho soup from Moosewood cooks for a crowd (sortof), with the addition of corn.   Instead of starting with tomato joice, I started with a #10 can of crushed tomatoes.  Then add lots of chopped vegetables, whatever ones are available from the garden. (1 qt of fresh tomatoes, 3 cucumbers, a zucchini, some yellow squash, a couple of onions, and a couple of green peppers).  I figure 12-oz of soup a person if you have other things to go with it.
 Here you see some of the things we had with it.  a quesacilla per person, some guacamole (again, based on a recipe from Moosewood, I add some tofu to the 4 or 5 avocados, some lemon or lime juice, some salsa... some garlic, some spices --- cumin, and cilantro.)
We were lucky this year, we had fresh salad from the garden all summer long.
